What is steak aging?
A great steak begins long before it hits the pan or grill. The key to its flavour and tenderness lies in the aging process. This is when beef develops a character that simply cannot be achieved any other way.
Aging means storing meat under strictly controlled conditions — the right temperature, humidity, and air circulation. During this time, natural processes take place that:
- improve tenderness,
- deepen flavour,
- enhance aroma and colour.
In practice, there are two main types of steak aging.
Dry aging (dry aged)
This is the most classic and prestigious method of aging beef.
The meat rests for several weeks in special chambers where:
- temperature is kept at around 0–2°C,
- humidity is controlled,
- air circulates constantly, allowing the meat to "breathe."
During this time:
- some moisture evaporates — the meat loses weight but gains concentrated flavour,
- natural enzymes break down muscle fibres, making the steak more tender.
The result of dry aging:
- a deeper, more intense flavour,
- often subtle nutty and buttery notes,
- meat that literally melts in your mouth,
- a characteristic darker colour on the outside.
This is the method used in the world's finest steakhouses — it requires time, space, and expertise, but delivers the most spectacular results.
Wet aging (wet aged)
Wet aging involves maturing meat in airtight, vacuum-sealed packaging. The beef typically spends anywhere from a couple of weeks to several weeks inside.
During this time:
- the meat retains its natural moisture,
- enzymes also work to soften the fibres,
- the flavour becomes fuller than in unaged meat, though milder than with dry aging.
The result of wet aging:
- excellent juiciness,
- a more delicate, "cleaner" flavour profile,
- less weight loss compared to dry aging.
This method is more economical and consistent, which is why it is often used in larger-scale steak production.
What does aging actually do?
Regardless of the method, proper aging:
- increases tenderness — the steak is easier to cut and more pleasant to bite into,
- enhances flavour — the beef stops being "anonymous" and gains real character,
- improves texture — the meat is firm yet soft and juicy at the same time.
That is why two steaks from the same cut of beef — one aged, one not — can taste like completely different products.
