Beef Pear Cut

"Gruszka" (Polish for "pear") is the name given to one of the most sought-after cuts of beef, especially among steak lovers. It comes from the part of the beef known as the round (top of the hip). It's a tender, juicy cut with a very delicate structure, located near the animal's hip area.

The pear cut isn't very large – typically only about 2–3 kg is obtained from one animal. This rarity and exceptional quality make it one of the most expensive and highly prized cuts of meat.

It's commonly prepared as a steak, but can also be roasted whole. Because of its tenderness and low fat content, the beef pear cut is best pan-fried on a very hot pan, searing it quickly on the outside while keeping the centre juicy. A perfect pear cut steak should be crispy on the outside and pink and juicy on the inside.
